2 tsp olive oil

1 cup chopped onion
|

2 tsp fresh oregano, chopped
|

4 garlic cloves, minced
|
|
3 cups chopped yellow squash
|
|
3 cups chopped zucchini
|
|
1 cup fresh corn kernels (2 ears)

3 cans chicken broth
|
|
1/2 cup pasta
|

Instructions |

|
Heat oil over medium-high heat. Add onion, saute 3 minutes. Add oregano and garlic, saute 1 minute. Stir in squash, zucchini and corn, saute 5 minutes. Remove from heat.

Place broth and tomato sauce in pot, bring to boil. Add vegetable mixture, simmer 20 minutes.
|

|
Add pasta, cook until tender.
