Wash and dry sweet potatoes. Rub with margarine.
Cover baking sheet with foil. Arrange potatoes so
they do not touch. Bake in preheated 350 degree oven
for about 1 1/2 hours or until potatoes are
completely soft when you squeeze them.
Option 1- Combine 1 T. margarine and 1 T. brown
sugar per potato. While still hot split potato and
mash margarine and brown sugar mixture into it.
Option 2- When potatoes are cold (really good to do
next day) slice into rounds and roll in granulated
sugar then fry in butter until crispy and brown.
