Preheat oven to 375. Flour roast, then sear in a skillet with oil; put seared roast in large pot. Chop up carrots & potatoes & onions and put them in a large ziploc bag already filled with oil (olive or other) and seasonings. Coat well
Dump potatoes & carrots over roast, cover and bake 3 1/2 to 4 hours.
