1 lb. white Northern beans, soaked in water overnight
6 c. low-sodium chicken broth, heated
2 Tbs. freshly ground cumin
1 tsp. oregano
1/4 tsp. ground cloves
1/2 tsp. cayenne pepper
4 c. cooked diced chicken breast (1 1/2 pounds)
salt to taste
Instructions
Add oil to nonstick skillet. Using medium heat, sauté' onions, garlic and Serrano chilies. Drain beans and add to large crock pot with 6 cups boiling hot chicken broth. Add onions, garlic and chilies. Add all seasonings and cook in crock pot on high setting for 6 to 8 hours. Test for doneness. Add diced chicken and cook for 30 more minutes.
