1 small bunch kale, stems discarded and leaves torn (7 cups)
1/2 cup milk
1/2 cup olive oil
Instructions
Combine sausage, onion, tomatoes with juice, tomato
paste, garlic, water, and 3/4 tsp each salt and
pepper in crock pot. Nestle the potatoes in the
liquid and top with kale.
Cover and cook until potatoes are tender - low for 7
hours or high for 4-5 hours.
Transfer potatoes to bowl, add milk, oil, and 1/2
tsp each salt and pepper and mash.
Serve stew topped with some of the mashed potatoes.
