1 1/2 cups nuts (pecans or walnuts coarsely chopped)
3 eggs beaten
1 1/2 cups oil (canola or veg.oil)
2 cups sugar
1 1/2 tsp.vanilla
Instructions
Sift or whisk together dry ingredients and add apples and nuts.
Combine remaining ingredients and add to apple mixture. DON'T
USE MIXER.
Pour into greased and floured tube/bundt pan.
Bake at 350 for 1 hour - or until done.
Topping for Apple Cake-
1/2 stick butter,
1/2 cup light brown sugar,
1/4 cup evaporated milk.
Mix and boil 2 1/2 min. Drizzle over top of cake while still hot.
