Bake sweet potatoes in 350 degree oven for 1 hour 30 minutes. Remove peeling. In a large bowl, mash potatoes with a fork. Add 1 stick butter, light brown sugar, milk, nutmeg, cinnamon, vanilla and egg. Mix well.
Generously spray a bundt pan or 9-cup mold with cooking spray and lightly grease with 1 tablespoon soft butter. Sprinkle brown sugar in bottom of pan, follow with pecan halves, then gently spoon in the sweet potato mixture.
Bake at 350 degrees for 60 minutes. After baking, let cool 15 minutes and unmold onto warming plate.
