Cut chicken into small pieces. Saute onion in butter, add paprika, salt, cayenne and chicken. Brown chicken on both sides, then add water.
Cover and simmer until chicken is tender, about 45 minutes to 1 hour. Remove chicken to serving platter
Mix sour cream and flour, then stir carefully into the pan. Simmer gravy for 5 minutes, do NOT boil because sour cream will curdle. Pour gravy over chicken.
