1 pkg. (10 oz.) frozen green beans, partially thawed
1/2 c. - 2 T. uncooked ditalini or tubetti pasta
Instructions
MEATBALLS- In medium bowl with fork combine ground beef, bread crumbs, egg,
Parmesan, parsley and pepper. Shape into 1-inch meatballs. Set aside.
SOUP- In 3-quart saucepan, melt butter over medium. Add onions and cook 3 minutes.
Stir in beef broth, water, tomatoes with liquid, oregano and sugar. Bring to a boil over
high. Reduce heat to low and simmer 8 minutes.
Add green beans and simmer 3 minutes.
Stir in pasta, then carefully add meatballs, a few at a time. Simmer 12 minutes, stirring
occasionally, until meatballs are fully cooked and pasta and veggies are tender. Serve
with grated Parmesan cheese, if desired.
