6 oz. fresh mozzarella, sliced to 1/4 inch thick rounds
2 - 3 large plum tomatoes, seeds and excess liquid removed, sliced to 1/4 inch thick rounds
12 medium size fresh basil leaves
2T olive oil
1 tsp. sea/kosher salt
1/2 tsp. ground peppercorns
Instructions
Stretch prepped dough to desired shape and thickness and place on parchment paper or wood pizza peel.
Spread dough evenly with pizza sauce, leaving one inch border around edge. Layer on mozzarella pieces, tomatoes, and basil. Drizzle with olive oil, and sprinkle evenly with salt and pepper.
Transfer pizza from parchment/peel onto heated grill pan that has been oiled and heated to medium high heat.
Cook pizza for 8 - 10 min., or until cheese is melted and crust is firm and lightly charred. Remove from grill pan, slice and serve.
