2 1/4 tsp. active dry yeast, 1 1/4 cups warm water, 2 tbs. sugar, 3 1/4 cups all purpose flour, 1 tsp. salt, 1/2 cup baking soda, 1 egg. Preheat oven to 450 degrees. Line a baking sheet with parchment paper or use non stick baking sheet. Pour water in a bowl and sprinkle yeast over top, add sugar and stir. Allow yeast to bloom for 5 to 10 mins. Once it's nice and foamy it is ready. Fill a big pot with water and bring to a boil over medium heat. In a small bowl beat the egg with 2 tbs. water and set aside. Add flour and salt to the yeast mixture and mix until it forms a dough. Knead for a minute or two and let it stand for 5 minutes. Then cut dough into quarters. Roll each quarter into a long rope of about 12 inch. Cut around 11 to 12 pieces from each roll. Open into a small circle put a small square of chocolate in the middle and close and form into a ball. I used the Cadbury plain chocolate.
