1lb smoked sausage, sliced in 1/4 inch thick rounds
1.5c diced yellow onions
3 cloves garlic, minced
8oz penne pasta, uncooked
2c low sodium chicken broth
1 (10oz) can Ro-Tel tomatoes and green chiles
1/2c heavy whipping cream
Kosher salt
Ground black pepper
3/4c Monterey Jack cheese, shredded
1/3 cup thinly sliced scallions
Instructions
Add olive oil to cask iron skillet over medium high heat. Once skillet
is heated, add sausage and onions. Cook until sausage is lightly
browned on both sides. Add garlic and stir for about 30 seconds.
Add pasta, broth, tomatoes, cream, salt and pepper. Stir. Bring to
boil, cover skillet and reduce heat to medium low. Simmer until pasta
is tender, about 15 minutes. Turn oven on to broil.
Remove skillet from heat. Stir in half of the cheese and incorporate
into the pasta. Top skillet with remaining cheese and the scallions.
Broil skillet until cheese is melted and browned.
