In a sauce pan bring 2 c water and barley and salt to a boil reduce heat and cover simmer for 20 min stir in rice cover and simmer for another 20 min until barley is tender but chewy. Let cool.
Combine all salad ingredients. Combine dressing ingredients. Toss with salad. I leave off the dressing and just portion as needed or dress and then add a little more when serving as the dressing does get absorbed through time.
