FILLING- 1 cup treacle or molasses, 1 cup water, juice and rind of
one orange, 2 tsp. cocoa powder, 1 teaspoon bicarbonate of soda,
1 shot of anisette, 1 cup sugar, 2 tsp. mixed spice, about one cup
semolina and 1/2 ground almonds. You can add more semolina or
ground almonds if the mixture is too watery. Put all ingredients
into a pot except the semolina and bring to a boil. Add the
semolina very gently and stir, continue cooking, stirring once or
twice until the mixture thickens, remove from heat and allow to
cool. PASTRY- 4 sticks (1 pound) unsalted butter, softened
• 1 1/3 cups sugar
• 3/4 teaspoon salt
• 3 large egg yolks
• 2 teaspoons vanilla
• 4 2/3 cups all-purpose flour

In large bowl of a standing electric mixer beat together butter,
sugar, and salt until light and fluffy. Beat in yolks, 1 at a time, and
vanilla and beat until smooth. Beat in flour gradually, beating
dough until just combined well. Preheat oven to 350°F.
Form dough into a rectangle and let it rest for at least 30 minutes
in the fridge….To assemble..Roll dough into a rectangle over a
piece of parchment paper. Fill half of it with the filling leaving one
inch free at the edge. Lift the paper up with the dough and fold the
plain part over the filling. Tuck the edges and bake at 350 degrees
until nice and golden. Let it cool and add the frosting. For the
Frosting add 3 cups confectioners sugar with the three eggs whites
you have left over from making the dough and some lemon juice.
Spread the mixture on top. If mixture is too thick add some cold
water. Then design with food coloring mixed with water!
