Make the cheese sauce:
In a saucepan, melt butter. Add flour, combine well with a whisk. Stir until flour is slightly browned. Whisking constantly, add milk slowly. Season with pepper and mustard. Add grated cheese (all cheddar is standard, or use a mixture of cheddar, parmesan, provolone and/or other cheeses). Stir until cheese melts.

Boil the pasta according to package directions, drain and add to cheese sauce. Pour into a greased casserole dish (9x13 inch lasagne pan for a thin, crispy mac&cheese; a deeper dish for creamier mac&cheese). Top with breadcrumbs if you like. Bake at 350 degrees for 30-45 minutes, or until bubbly and slightly brown.
