Mix mustard seeds and mustard powder together in small mixing bowl. Add water and let mixture sit for 30 min. Add vinegar and salt and stir well. Mustard will be spicy.
Allow to sit for up to 5 days in cool, dark place, covered. Mustard will become milder the longer it sits. When desired heat level is reached, refrigerate. Will last for several months if sealed in refrigerator.
Can add regular or hot mustard powder in place of mild mustard powder for spicy/hotter style mustard. Or, black mustard seeds have more heat than brown and can be substituted.
Can sub in beer or white wine for vinegar to create different flavor profiles in mustard.
Can add honey or maple syrup and other herbs and spices to mustard once master recipe has been achieved.
