Rough chop the cauliflower into florets. Heat a large pot over medium heat and melt the coconut spread (or substitute if using). Add the diced onion and rainbow slaw until the onion is translucent, stirring occassionally - about 1 minute.
Add cauliflower, broth, spices, and garlic and bring to a boil.Once it boils, cover and cook for 15 minutes.
Stir in spinach, half and half, and beans. Cook abother 10 minutes on low, stirring occasionally.
Add bread crumbs, 1/2 cup at a time, and stir. Continue adding to desired thickness. Salt and pepper to taste.
