Meringue - 5 egg whites (weigh them in shell ) same weight in
sugar - mine came to 320g. 2tsp cornflour / 1 tbs white vinegar
/ 1tsp vanilla essence. Beat egg whites till fluffy and holding
peaks - add sugar a bit at a time and beat till all sugar is
incorporated. Add cornflour and vinegar and vanilla essence.
Beat gently until all incorporated.
Use a piping bag and pipe in a snail like shape over a circled
sheet of greaseproof oven paper. Make 2 of these (mixture is
enough for 2 layers). Bake for an hour in a 150deg oven - after
1 hour turn off oven and leave to cool in oven till cold - about
another hour for sure.
Cream filling.
1/2 tub philadelphia cheese - 1/2 cup icing sugar - 1/2 cup well
mashed fresh strawberries ( i used my homemade strawberry
jam). 1/2 tub Elmlea double cream. Beat all together untill
mixture is stiff - it might take some time
