3 large carrots, sliced into chunks (about 2 cups)
1 head broccoli, cut into small florets (about 4 cups)
2 tbsp thinly sliced chives
1/2 cup bread crumbs
3 tbsp olive oil
1 tsp salt
1 cup vegetable broth
Instructions
Preheat oven to 350 degrees F.
In a large bowl mash the chickpeas well. Add the vegetables and mix well. Add the bread crumbs and mix, and then add the oil and mix again. Add the salt and vegetable broth. Mix one last time. Put in a 9 x 13 casserole dish, press down firmly. Cover with foil and back for 45 minutes. Uncover and bake an additional 15 minutes. Serve hot or cold.
