In a large bowl, whisk together peanut butter, soy sauce,
vinegar, oil, and garlic. Add chicken or tofu and red pepper,
tossing to combine. Set aside.
Cook pasta. While it cooks, cut cucumber in half lengthwise
and thinly slice into half-moons.
Reserve 1/2 c cooking water. Drain pasta. Rinse with cold
water; drain well. Add pasta and cucumber to bowl with
chicken or tofu mixture. Toss until well coated. Garnish with
cilantro.
