3/4 pound boneless skinless chicken breast, pound until 1/2 inch thick
1 egg white
2 tsp water
1/4 cup Italian breadcrumbs
2 tsp olive oil, extra virgin
1/4 cup fat free chicken broth
1 1/2 tsp lime juice
Instructions
1. Whisk egg white & water in a flat dish. Place
breadcrumbs in another flat dish. Dip breasts in
egg mix then crumbs.
2. Heat 1 t oil in a sprayed
skillet on med heat. Add half of chicken to pan;
cook 3 min each side or until browned. Repeat
w/ remaining oil & chicken.
3. Add broth & lemon juice to pan, stir to loosen browned bits. Cook on high heat for 2 -3 min or until sauce is reduced.
Serve chicken w/ sauce.
