1 cup blueberries, fresh or frozen (I usually add more)
2 eggs
1/2 cup butter, melted and cooled
1 cup sugar
1 cup plain yogurt
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp grated lemon rind
Instructions
Beat together eggs, melted butter and sugar. Stir in yogurt. Add
dry ingredients until just blended, then fold in blueberries. Spoon
batter into greased or paper lined muffin tins. Bake at 375 degrees
for 25 minutes.
