2 tablespoons olive oil

2 small onions, diced

2 cloves garlic, minced
|

2 sprigs thyme
|

1 bay leaf
|
|
2 cups red wine
|
|
|
|
2 cups diced, canned tomatoes

4 cups beef broth
|
|
4 large carrots peeled and cut
|
|
4 large parsnips, peeled and cut
|

2 large russet potatoes, diced

Instructions |

|
Season the beef. Dredge in flour (shake off). Heat olive oil in big pan to cook beef (brown well).

Add onions, garlic, thyme, bay leaf and tomatoes. Cook 1 hour.

Add carrots, parnips, potatoes and cook 20 minutes.
