Mix sugar, butter, and vegetable shortening. Add egg yolks and mix until creamy. Slowly add flour and baking soda. Add remaining ingredients (buttermilk, pecans, vanilla, coconut).
In a separate bowl, whip egg whites until stiff and then fold into cake mixture.
Pour into 2 8-in or 9-in greased and floured round cake pans, or one 13 x 9 cake pan. Bake for 30 minutes at 350 degrees.
For frosting-
Mix ingredients and spread on cooled cake. Sprinkle whole pecans over frosting if desired.
