In a 10 quart Dutch oven or pot combine all ingredients EXCEPT the corn starch. That will be added last to thicken mixture. Bring everything to a gentle boil, uncovered, for 5 minutes, stirring occasionally. Stir together the corn starch with 2 Tablespoons of water and slowly add to the pot, stirring. Cook another 2 minutes. Ladle hot relish into sanitized pint size jars leaving 1/2 inch at the top. Place jar on wire racks to cool completely.
