Method- Pastry
Mix flour and butter in a bowl till it looks like
bread crumbs, add sugar and the grated rind. Whisk
eggs and add it to the mixture. Add the vanilla
essence and complete stirring, some times you have
to mix a little milk to form a stiff paste. Turn
dough on to a floured board and leave it for half
hour aside.

Method- Filling
Mix ground almonds, sugar, lemon rind and the
lemon juice. Whisk egg white and add it to the
bowl. Pour the almond essence and little water, to
the mixture not too much leave it as a paste. Roll
out pastry spread some jam. Spread the almond
mixture on jam don't make too much or else will
come from sides. Roll it with the mixture inside.
Cut the roll in slices and put them on a greased
baking dish. Bake on 180c for 30 minutes. When
ready put some jam on top and decorate with flaked
almonds. If you have left over pastry or almond
mixture you can make something else with it, don't
throw away. I have make some small almond pastries
