Gelat tal-Bajtar
8 prickly pears
1 tub Emlea Double Cream
1 cup Milk (I used skimmed)
1 teaspoon vanilla
2 eggs
3/4 sugar
Bajtar syrup
1 cup water
1/2 cup sugar
4 prickly pears
1. Break the eggs into the mixing bowl.
2. Whisk until light and fluffy.
3. Gradually whisk in the sugar until incorporated
4. Add the cream, milk and vanilla extract and mix well.
5. Blend the prickly pears together and drain off the seeds.
Add prickly pears juice to the ice cream mixture and put in the
ice-cream machine for app.30 minutes.
6. Place in a container and let it set in the freezer.
Prepare the Bajtar Syrup.
1. Melt Sugar in Water
2. Let it cool
3. Blend and drain off seeds of the prickly pears
4. Add the prickly pear juice to the syrup
Finally take out the ice cream container from the freezer and
add the syrup and let it set!
