Combine vegetable, fruits, and shallots in large bowl. In smaller bowl,
whisk together vinegar, oil, salt and pepper. Pour vinaigrette over
vegetables and fruits and toss gently to combine. Place bowl in
refrigerator and allow to marinate for at least 30 minutes.
Remove from refrigerator, stir in herbs. Adjust seasonings to taste.
