Slice the yam into thin rounds.
|

|
Pan fry the yam in the butter, use a tbsp at a time, done it in batches until all of it is sautéed.

Put the sautéed yams in a deep pot.
|
|
|
Add ½ cup of water and the corn syrup.
As they are boiling add the sugar to it really slowly.
Cook on low fire for about 60 minutes or until the yams have absorbed plenty of the syrup making sure that it doesn’t stick or overcooks (burns).
Serve with a hot cup of coffee.
