4 c chicken stock

1T olive oil

1 tsp. salt

1/2 tsp. pepper

zest and juice of one lemon

1 tsp. dried oregano

Instructions |
|
|
In medium sized sauce pot, combine chicken stock, olive oil and salt. Bring to boil.
|

Stir in orzo, cover pot, and reduce heat to low. Simmer, covered, for 15 - 20 minutes, or until liquid is absorbed.
|

|
Remove lid from pot and add lemon juice, zest, pepper and oregano. Mix well to combine.

|
Stir in fig-olive tapenade if desired.
