Dough-
250g strong flour
1 1/2 tbsp milk powder
1 tsp salt
2 tsp instant dried yeast
1/2 tbsp sugar
30ml olive oil
1 egg, beaten
150ml water
Mix flour, milk powder, salt, yeast and sugar in a
large mixing bowl.
Add oil and egg and stir whilst adding enough water
to make a soft dough.
Leave to rest for 10 minutes. Knead lightly, and
leave to rest for 30 minutes. (I noticed that when i
tried kneading it was getting stickier so i just
stopped).
After 30 minutes, knead again lightly, leave for
another 30 minutes and then divide the dough into two
30cm pans.
Topping
200g minced lamb (or beef)
1 medium onion, finely chopped
1 tsp salt
1 1/2 tsp ground cinnamon
1 1/2 tsp ground allspice
1/2 tsp chilli flakes
chopped parsley
2 tbsp pomegranate molasses
1/2 tsp ground coriander
freshly ground black pepper
2 tbsp tahini paste
pine nuts (or flaked almonds)
mozzarella ball

Mix all the ingredients (except the tahini paste,
pine nuts and mozzarella) together. Place in fridge
until use.
Spread tahini paste on the dough. Sprinkle the minced
meat mixture and bake in a preheated oven at 200 deg
C for 10-15 minutes.
Remove from oven, sprinkle with pine nuts and return
to oven for 4 minutes to roast the pine nuts.
Finally sprinkle mozzarella and return to oven until
mozzarella is melted.
