Two heads of Romain Lettuce, wash then tear or cut into chunks
Homemade croutons-flavored with olive oil, garlic powder, oregano, and basil
Instructions
Mash garlic and anchovy with salt in mortar and pestle. Whisk
together olive oil, egg, 1/2 of the Parmesan cheese, and lemon
juice along with garlic/anchovy paste.
Make croutons...
Toss lettuce with dressing and croutons. Add remaining
Parmesan.
Make full batch of dressing, split the quantity of lettuce and
dressing over two nights. Don't wait too long to use the
second half of the dressing. (For two people)
For a crowd, just double everything and serve it all at once.
