Cook and shred chicken or chop up carniasata steak.
Set aside. Slice onion and saute in oil in skillet.
Once they are to desired tenderness, add chicken or
steak to onion and season with cumin, garlic powder,
salt and pepper. Set mixture aside.
Drizzle oil in skillet and place tortilla in it.
sprinkle cheese lightly, add chicken and onion
mixture on top and then sprinkle a little more
cheese over that. Place second tortilla on top.
Remove quesadilla when both sides are brown and
cheese is melted. Cut and serve with sour cream
