Instructions
To use as freezer meal, place roast and onion in large freezer bag. Sprinkle in cumin then add salsa and tomatoes. Zip closed and place in freezer. To use, thaw in fridge for 24 hours. Empty contents into crock pot and cook on low for 8 to 10 hours.
Once cooked, remove roast from crock pot and shred. Drain juice from crock pot, reserving juice in bowl. Leave onions and tomatoes in crock pot. Add meat back into crock pot and stir. Add some of the juice back in. Serve on tortillas with choice of toppings.
