2 1/2 lbs Yukon Gold Potatoes, peeled, cut into large chunks
1/2 block of cream cheese
1/2 c. sour cream or butter
1/2 c. milk or whipping cream
1 tsp. salt
Black pepper to taste
Instructions
Place potatoes in a large pot of lightly salted water. Bring to a boil, and cook until tender when pierced with a fork, about 15 min. Drain, and mash well.
Add cream cheese, butter or sour cream, and milk, and stir with fork, mixing well until combined. Add pepper and salt to taste.
The, if desired, use a hand mixer to mix well a remove any extra lumps so it is creamy.
