Popcorn- Heat oil in a covered medium sized pot with two popcorn
kernels in the center. Once the kernel/kernels have popped add
remaining kernels. As kernels pop, shake pot to help prevent
burning. Once the majority of the kernels have popped remove
from pan and put in large mixing bowl.
Caramel- Place all ingredients except for baking soda in a small
sauce pan. Turn burner on medium low and stir till melted. Once
the butter is melted and everything is mixed remove spoon and let
simmer for 5 minutes without stirring. Once five minutes is up add
the baking soda and mix till caramel is slightly foamy and a lighter
color of brown. Slowly pour over popcorn and mix till the caramel
is evenly distributed. Eat warm from the bowl or let cool on a wax
paper.
