Cook potatoes in microwave for approximately 8
minutes. Open potatoes and remove skin. Push
potatoes through a fine mesh strainer into a
bowl to remove moisture. Let sit for ~15
minutes to cool. Pour in two beaten eggs. Add
2/3 cup flour and mix until it reaches dough-
like consistency.
Separate dough into about 5 chunks and roll
into 1/2 inch thick logs and then cut into 1/2
inch pieces. Roll each piece on the back of a
fork to make ridges. Bring a salted pot of
water to a boil and add gnocchi. When they rise
to the surface, take them out and saute them in
a preheated pan with oil until brown.
For pesto sauce, use a mortar & pestle to
combine basil, garlic, pine nuts, oil, pepper,
and cheese until smooth. Pour sauce over pasta
and top with more parmesan. You may also
include meat such as pancetta, prosciutto, or
chicken.
