Preheat oven to 425 degrees. In a pot on medium
heat, combine water and butter and bring to a
simmer. Slowly whisk in flour. Continue
whisking and cooking for a few minutes. Then
transfer this dough to a bowl to let it cool.
Add in thyme and pepper. Vigorously whisk in
both eggs. Whisk in gruyere and once everything
is completely mixed, shape the dough into small
balls. Place these balls on a baking sheet
lined with foil and top with some extra
gruyere. Bake for 15-20 minutes or until golden
brown. Serve warm, with a side of cream cheese to dip.
