Bring a large pot of salted water to a boil. Add
macaroni and cook until tender. Drain well.
Meanwhile, in a medium saucepan over medium heat,
melt butter. Add flour and whisk until
incorporated. Let mixture cook about 1 minute.
Gradually whisk in cold milk. Bring to a boil and
continue to cook until sauce thickens and coats
the back of a spoon in a thick even layer, about
10 minutes. Remove pan from heat and add cheese,
stirring until melted.
