Drain, cook, mash black beans. Mash until thick
and pasty.
Chop red pepper, garlic, and jalapenos and add
to black bean mixture.
In small bowl, stir eggs, chili powder, cumin,
garlic powder, oregano, pinch of salt and
pepper. Then add this to black beans.
Add breadcrumbs to the mixture and mix together
until mixture is sticky and holds together.
Make patties. (this quantity should yield about
10 - 12 patties)
Preheat oven to 375 degrees and bake about 10
minutes on each side or as needed.

For caramelized onions-
Cut onions long and skinny.
Add to skillet with 2 tablespoons of oil, 2-2.5
tablespoons of light brown sugar, and 2
tablespoons of balsamic vinegar.
Let cook for about 20 minutes or until onions
are a golden brown.
Remove from heat and add salt and pepper to
taste.
