Preheat Oven to 325 degrees F.
Spray muffin pans with FF cooking spray.
In a large bowl, beat eggs until light and frothy. Mix in applesauce and Splenda. Stir in zucchini and vanilla. Combine flour, cinnamon, nutmeg, baking powder, and salt; stir into the egg mixture. Divide batter into prepared pans. (spooning 1 heaping tbs of batter into each muffin tin yields about 32). Bake for about 15 minutes or until done.
