Place first 3 ingredients in a large micro safe bowl. Cover with
plastic wrap and vent. Microwave on high 10 mins or until
potatoe and parsnip are tender, stirring after 5 mins.
Add milk, next 3 ingredients, and potato/parsnips in a blender.
Blend until smooth.
Pour blender contents into a large saucepan, cook over
medium heat, 5 mins or until thoroughly heated. Stir
occasionally. Remove from heat and add cheese, stir until
melted.
