Mash avocado with a fork. Leave some of the
Avocado chunky for more texture if you like. Add
onion, lime juice, salt, pepper and cilantro. Fold
in shredded chicken. Mix well.
I made this using 4 boneless chicken breasts which
I roasted with a little EVOO and garlic and herb
seasoning. I used 3 whole avocados. That made
about 8 good size servings. I upped the other
ingredients accordingly.
