medium-high heat for 30 seconds. Add 1½ cups sliced shiitake mushrooms
and ½ cup sliced onion; sauté 4 minutes. Stir in rice noodles, 1
tablespoon lower-sodium soy sauce, and ¼ teaspoon kosher salt.
