Pierce potato with fork, microwave on high 8 to 10 minutes until potato is soft. Once cool enough to handle, peel and discard skin. Mash potato with a fork and reserve. Coat medium pot with cooking spray, heat over medium, high heat.
Add chopped onion and garlic. Cook, stirring 1 to 2 minutes until onion is soft. Add broth and soy milk. Slowly whisk in flour until completely dissolved. Stir in mashed potato until blended.
Add cheddar cheese, sour cream, bacon, onion powder, salt and pepper. Reduce heat to low and simmer for 2 minutes.
