Crust-
Mix (4) Cups of flour & 2 tsp salt, cut in (4)
1/3's heaping shortening, add 8 tbsp 'Ice' cold
water. Mix well, do not need. Feel free to add
more shortening to get smooth dough. Roll out
thin layer for bottom of pan including lip.

Filling-
In saucepan put Peaches, 1 1/2 cup sugar, 8
tbsp flour, 1 tsp cinnamon. Cook over moderate
heat, stirring constantly till mixture thickens
and boils. Pour in bottom of crust & dot with
about (3) tbsp butter.

Top crust - just roll out the other 1/2 of the
dough nicely to fit top of pan.
Optional- sprinkle with sugar on top.
Bake 425 degrees approximately 1 hour or more
|

Picture shown is a double recipe, therefore double crust and
ingredients. Will feed 10-12
guests.
