     Turkey Veggie Meatloaf

Ingredients
- 2 tablespoons oil
.- 1 cup Zucchini, finely diced
- 1/2 cup red bell pepper finely diced
- 1 yellow bell pepper, finely diced
- 1/2 cup Onion, finely diced
- 4 cloves garlic, finely diced
- 1 large egg, lightly beaten
- 1/4 cup fresh parsley, or 2 tablespoons dried
- 1 1/2 lb. 93% lean ground turkey- 1 cup plain Panko breadcrumbs
 
- 1/4 cup Parmesan cheese
- 1/2 cup No Salt Added Ketchup

Instructions
Preheat the oven to 425 degrees. Heat the oil in a large saute pan over high heat. Add the zucchini, bell pepper and garlic. Cook until the vegetables are almost soft, about 5 minutes. Set aside to cool. Whisk the egg and parsley in a large bowl. Add the turkey, pank, cheese, ketchup and the cooled vegetables; mix until just combined. Gently press the mixture into a 9- by- 5- inch loaf pan. Bake for 1 to 1 1/4 hours.
