Method- Pastry
Mix flour and salt in a bowl, rub in butter and
sugar if you want it (mine was left over short
pastry didn't have sugar). Mix cold water to
form a stiff paste. Make it into a soft dough
,and if you want, you can put it in fridge for
15 minutes. Grease a 24 cm flan baking tin,
roll out pastry and cover tin with it. Press
with a fork all around the edges from inside
and prick holes in the base, chill for 20
minutes (this prevents it from rising in the
oven). Leave some pastry to make strips for the
top.

Method- Filling
Cut the pitted dates into pieces with some
water in a pan and heat till they are moisten
and soft, add the lemon juice (optional). Take
it from heat, add the chopped almonds and leave
to cool, don't leave it to much on heat. Spread
the mixture in the flan tin, that you covered
with pastry. Cut some pastry strips to decorate
the top and create a lattice. Sprinkle some of
the remaining chopped nuts in the spaces where
there is no pastry. Brush the strips and all
around the edges with milk or beaten egg. Bake
for about 20-25 minutes on 200c or till the
strips turn golden brown. Enjoy -)
