Preheat oven to 400. Coat baking sheet with cooking spray
Mix cornstarch, salt, cayenne pepper in one bowl. Coconut in another bowl. Eggs in another bowl. Dredge shrimp in cornstarch, dip in egg, roll in coconut.
bake 15-20 minutes until brown, flip 1/2 way through.
Dipping sauce - 1/2 cup orange marmalade, 1/3 cup sweet thai chili sauce, pinch salt, pinch cayenne
