Cook sausage in Dutch Oven until brown. Add
onions and cook until clear. Remove sausage and
onions. Drain most of the grease, leaving a
little for cooking the potatoes. Add hash
browns and fry until golden brown. Stir in
sausage and onions. Beat eggs in mixing bowl
and pour over hash browns, sausage, and onion,
cover and cook until eggs become almost solid.
